Having been recently introduced to Pinterest and cooking for my family of 4 (yes I count the baby inside because he eats too!) on a budget I realized that I have some YUMMY and CHEAP recipes that we just LOVE. For the next 5 days I am going to post a recipe a day.
Day One: Tortilla Soup
Full disclosure the original recipe is not mine, but has been adapted to fit our families’ needs. Kristen is the original genius.
1 can fully cooked Chicken (do NOT drain and shred it up!)
6 cups Water
6 Bullion cubs
1/2 a bunch of coarsely chopped Cilantro
1 can Rotel or tomatoes w/chilies
1 can Black Beans (drained and washed!)
1/4 cup frozen corn
1/2 cup rice (cooked or raw works too)
2 Limes (freshly squeezed or in a fake lime)
6 flour tortillas (cut into strips)
1/2 - 1/4cups Oil ( just enough to lightly fry)
Throw everything into the Crockpot for 5 hours on LOW.
Heat oil and fry 3 to 4 strips of tortilla @ a time. Salt the strips when they are drying/cooling off
Serve with shredded Cheese, sour cream, tortilla strips, and enjoy!
Oh J likes to add hot sauce, so you can too!

This sounds delish!!! But I'm a bit unsure about the Rotel or tomatoes w/chilies. What's this?
Hey Lindsay, Rotel is just the American brand name, it gives it a little Mexican flare without too much heat, I absolutely love it!
