Before I give you the recipe I have to say I received the original from Mindy Choate (and that one is GOOD!), but like all recipes I have made it my own. But credit must be given where credit is deserved.
Healthy Chocolate Chip Cookies
Ingredients:
6 Tbs. warm water
2 Tbs. ground flax seed
1 cp. white sugar
1 cp. brown sugar (light or dark) slightly packed
3/4 cp. applesauce
1/8 cp. shortening
1 Tbs. milk
1 tsp. baking soda
1 tsp. salt
1 tsp. Mexican vanilla (yes the mexican one makes a difference, but you can use the regular kind too)
1-2 cps. semi-sweet chocolate chips
2 1/4 cps. flour
In a small bowl add water and flax; let sit for 2 minutes
In your mixing bowl mix the sugars, applesauce, shortening & flax seed mixture.
Mix on med-high for a few minutes. You want it mixed really well!!!
Add milk, salt, b. soda & vanilla.
Next add the chips.
Mix in flour in 1/2 cup increments.
Bake @ 375 for 9 minutes.
*optional: For St. Patricks day I added not only food coloring, but 2 Tbs. pureed Spinach and no one knew! You could do this anytime for your boys and tell them some story about them being green ;)
