let me start off by saying i LOVE planning meals for my family.
it's hard
takes time
and makes me feel successful
i have been shopping weekly since we moved to Oklahoma 2 years ago (we used to shop once a month. YUCK)
someone recently told me to plan one major thing you want to make that week and plan the rest.
i didn't get it at first, but know i completely do!!!
let me show you:
day 1- make your own Stir-Fry (i use broccoli, corn, bell peppers, onion and meat) white rice
day 2 - Fajitas (same kind of meat as yesterday, onions, bell peppers) w/tomatoes, lettuce and black beans. Oh and homemade tortillas
day 3 - Chef Salads: left over meat from days (1&2 adds flavor), tomatoes, avocado, bell peppers, onion, lettuce and cucumber
day 4 - Paninis (lunch meat, avocado, toms, lettuce, bacon, onion & b.pepper) homemade bread!
day 5 - Breakfast Burritos: eggs, cheese, onion, b.pepper, bacon, tomatoes & black beans (left over tortillas)
day 6 - Pizza: bacon, toms, onion, and b.pepper
day 7 - Soup; use all things that are left over. It'll be yummy!
i know it kinda looks like the same thing everyday but in one week we are having Asian, Mexican, American, Italian, Tex-mex, Italian and good old American!! these are all dinners. lunches are left overs usually. unless J has a half day then we have a family lunch date.
i know it sounds crazy but this saves TONS of $$$$ and is a fun way to eat around the world. the next week instead of going to Italy twice we could go to Asia and have stir fry and then sweet and sour chicken.

I plan for the whole month but only shop two weeks at a time. Spencer usually helps me figure out the entrees, lunches are always left overs, and yes my helper husband definitely sneaks bites if I let him. The only thing is he has a healthy appetite so I'm not sure there would be enough to carry over into two or three meals....it sounds like I'm going to need an over the phone tutorial. :)
lol....head chef. Can i seriously hire you to come to my house and make us dinner everynight?
